That ’70s Cake, Gluten Freed!

Quarantined for Covid-19, I found myself returning to some of the comforts of my childhood, listening to Simon and Garfunkel and Cat Stevens and making my mom’s best recipes. The foods of my childhood included “wine cake” which showed up at every potluck back in the day. The original was made using a yellow cake mix and a package of pudding. I stumbled up on the Pancake Princess blog and found her version of this nostalgic classic. I gluten freed it and the results were pretty spot on. I think my mom would approve!

That '70s Cake. . . Gluten-freed!

Ingredients
  • 1 ¼ cup white rice flour
  • ½ cup + 2 tablespoons tapioca flour
  • ½ cup + 2 tablespoons potato starch
  • ¼ cup Thai rice flour
  • 1/8 teaspoon xanthan gum
  • 1 teaspoon kosher salt
  • ½ teaspoon nutmeg
  • 1 tablespoon + 1 teaspoon baking powder
  • 1 ¾ cup granulated sugar
  • 4 tablespoons butter cut into small pieces, brought to room temperature
  • 4 eggs
  • ¾ cup veg oil
  • ¾ cup dessert or white wine*
Directions
Step 1
Preheat oven to 350.
Step 2
Generously butter and flour a bundt pan.
Step 3
In a large bowl, whisk together dry ingredients (white rice flour, thai rice flour, tapioca flour, potato starch, xanthan gum, sugar,nutmeg, baking powder)
Step 4
Cut in butter using either a pastry cutter or your fingertips until incorporated and no detectable butter pieces remain.*
Step 5
Combine liquid ingredients (eggs oil and wine) until incorporated
Step 6
Add wet ingredients to dry, gently mixing until no streaks remain.
Step 7
Pour into the prepared pan and gently rap the pan on the counter to release bubbles.
Step 8
Place in a preheated oven and bake for 35 minutes.
Step 9
Do the toothpick test to assure doneness: if the toothpick (or cake tester) comes out clean, remove the cake from the oven. If not, continue to bake another 5-10 minutes until the tester comes out clean.
Step 10
Cool cake for 10 minutes, then invert cake to remove from pan.
Step 11
Dust with powdered sugar before serving.

Make Ahead! After completing steps 1 & 2 you have created a cake mix which can be used immediately or kept in the refrigerator or freezer for later use.
Step 14
Some wines to use in this cake: sauvignon blanc, riesling, sherry , or any leftover white wine all are great options. You can also use rum, but then you’d have rum cake, not wine cake!
